4 cups vegetable broth

Instructions: #

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the onion and garlic to the pot and sauté for about 2-3 minutes until they start to soften.
  3. Add the carrots, celery, bell pepper, zucchini, and green beans to the pot. Stir well and cook for another 5 minutes.
  4. Pour in the diced tomatoes and vegetable broth. Stir in the dried thyme, dried oregano, salt, and pepper.
  5. Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes, or until the vegetables are tender.
  6. Taste the soup and adjust the seasoning if needed.
  7. Ladle the soup into bowls and garnish with fresh parsley.
