Instructions: #

Cook the noodles: #

  • Bring 1 litre of water to a boil in a pot.
  • Add 15 g of salt to the boiling water.
  • Add 130 g of noodles to the boiling water and cook until they are al dente.
  • Drain the cooked noodles and set them aside.

Prepare the eggs: #

  • Heat 1 tablespoon of vegetable oil in a frying pan or wok.
  • Crack the egg into a bowl and beat it lightly.
  • Pour the beaten egg into the heated oil and scramble it.
  • Remove the scrambled egg from the pan and set it aside.

Stir-fry the vegetables: #

  • Heat another tablespoon of vegetable oil in the same pan or wok.
  • Add 60 g of diced onions, 30 g of capsicum, 30 g of carrots, and 50 g of cabbage.
  • Stir-fry the vegetables on high heat for 2-3 minutes until they are slightly tender.
  • Add 2 finely chopped green chillies and 5 g of minced garlic to the pan and continue to stir-fry for another minute.

Cook the prawns and ground chicken: #

  • Add the prawns and ground chicken to the pan with the vegetables.

  • Cook them on medium heat until they are fully cooked and slightly browned.

  • Make sure the prawns are pink and opaque, and the ground chicken is cooked through.

  • Season and sauce the chowmein:

  • Add ¼ tsp of pepper, a pinch of gorom moshla, and 20 g of salt to the pan.

  • Sprinkle ¼ tsp of sugar and ¼ tsp of MSG over the mixture.

  • Pour 1 tsp of soy sauce, 1½ tsp of vinegar, ½ tsp of red chilli sauce, and 1 tsp of green chilli sauce over the ingredients.

  • Mix everything well and cook for an additional 2 minutes to let the flavors blend.

Add the cooked noodles and scrambled egg: #

  • Add the cooked noodles to the pan with the other ingredients.
  • Add the scrambled egg.
  • Toss everything together gently using tongs or a spatula until the noodles are well coated with the sauce and ingredients.
  • Cook for another 2-3 minutes, stirring occasionally, to heat the noodles through.

Serve and enjoy: #

  • Transfer the mixed non-vegetarian chowmein to a serving dish.
  • Garnish with some chopped green onions or coriander leaves if desired.
